Mediterranean Garlic Herb Paste

1 Tlbs Parsley

1 tsp sage, rosemary, thyme and basil

1 ½ tsp oregano

5 tsp minced garlic

1 Tlbs red pepper flakes

1 ½ Tlbs salt

¼ tsp black pepper

½ cup olive oil

Combine ingredients in a medium bowl.  Cover and refrigerate until ready to use.  This paste will keep, covered and refrigerated, for up to 1 week.   Just prior to cooking the meat,  coat with the paste and grill.

 

Herb-Crusted Sirloin Kebabs with Tomato Basil Relish

Combine in a medium bowl:

1 pkg cherry tomatoes                                                                                   Mushrooms, halved or quartered

Red onion,  cut into small wedges                                                           Bell pepper, cut into 1-inch pieces

Whole garlic cloves                                                                                        (green, yellow, orange)

Olives, green or Kalamata                                                                           ¼ cup balsamic vinegar

¼ cup olive oil                                                                                                   1 Tlbs minced garlic

½ tsp salt                                                                                                             ½ tsp ground black pepper

Cut into 1 1/2 – inch pieces:

1 ½ to 2 pounds of steak rubbed with the Mediterranean Garlic Herb Paste

 

Thread the meat and vegetable on skewers.  Broil or grill for 8 to 10 minutes, turning the skewers occasionally.
